53 Untitled Restaurant is built on shared leadership: on one side, Cecilia Moro’s kitchen; on the other, Mariangela Castellana’s cellar. Two different paths, one shared vision — to create a coherent dining experience, where every choice, in the dining room as in the kitchen, reflects the same idea of hospitality.
Shaped by international experience and a solid technical grounding in seafood cookery, Cecilia chose to give voice to a personal cuisine: precise, contemporary, never self-referential. A path also recognised by the Michelin Guide with a Bib Gourmand.
Mariangela builds the wine list as an open-ended story, free of dogma and rigid allegiances. Organic, natural, artisanal or classic: every bottle is chosen for the dialogue it creates with the dish, not for its label.
Because wine is, above all, about sharing.
Together, they lead a project that puts people at its centre — in the dining room, in the kitchen, in the cellar — with constant attention to sustainable working conditions and to the quality of time, during service and beyond.
