Idea

In the very heart of Rome’s historic centre, between Piazza Navona, Campo de’ Fiori and the Pantheon, 53 Untitled Restaurant is a contemporary restaurant project that chooses not to fit within a rigid definition.

Untitled does not mean a lack of identity, but freedom from ready-made labels. It is a place that changes, explores, observes, and shapes every day its own way of understanding food, wine and hospitality.

Here, fine dining means technique in the service of flavour, thinking that stays legible, research that never forgets pleasure. Chef Cecilia Moro’s menu draws on contemporary, Northern European and French influences, yet finds a voice of its own: precise, cultured, essential, never self-referential.

Wine is part of the same story. The selection curated by Mariangela Castellana follows neither dogma nor rigid allegiances: organic, natural, artisanal or classic are tools for dialogue, not banners. Every bottle, every glass, every pairing is designed to accompany the experience with measure and depth.

We are a restaurant for those looking for Rome without nostalgia, for those who love places with a clear but understated identity, for those who want to feel welcome in a dining experience that is contemporary, precise and human.

A place where kitchen, dining room and wine work together. Without the trappings. With the ease of things well thought out.
